Recipes

Every recipe card on Our Clarke: the 1986 White Post Village Cook Book and recipes contributed by Clarke cooks, with what each card withholds and why.

In
All 251 released recipe cards of this dataset's two sources: 245 from the White Post Village Cook Book (1986) and 6 contributed to Our Clarke by Clarke cooks, each with its source page, yield, ingredients, directions, notes, rights basis and estimated macros.
Not in
No card of either source is left out. The Our Clarke recipes page also carries 95 cards this dataset does not: 70 from Clarke County Cooks, and 25 read from other publishers' web pages. Each of those sources keeps its own credit and rights, which Our Clarke's compilation license does not cover. 15 values on 15 cards are withheld in place (14 scan_debris, 1 headnote) and marked in the state columns with a note. Macros are estimates, and 210 cards carry no totals (154 partial, 56 withheld) with the reason in macros_json. Pages 70 and 71 of the book are missing from the scan.

Held fields

  • ingredients_raw: The ingredient lines as the scan read them. ingredients_json carries the same lines split into quantity and item, with the scan's garbled lines already withheld; the raw text would put them back.
  • category and category_as_attested: The recipe page's filter grouping and the book's chapter name. They sort the page; they are not facts about a recipe a download reader needs, and the chapter is on the book page cited.
  • temperature and time: Read by rule from the directions. directions_text carries the printed words, so a second, machine-read copy would present a reading as a separate fact.
  • community: The one community-context line a contributing cook gave. It describes the cook, not the recipe, and stays on the recipe card where the cook agreed to show it.
  • period_language: A flag on one card whose printed wording is of its period. The card on the recipe page carries the reader note; the wording itself ships as printed.
  • sort_name, book_slug and book_year: Page mechanics. The year is in source_book_citation.

Row filters

Every row passed the download boundary's two filters before it was written: rows about a person who may be living are excluded, and rows whose state is unresolved (verify, lead, ambiguous and similar) are excluded. This publication excluded 0 rows as possibly living and 0 as unresolved at that boundary.

Reading the data

A state column is never empty. present means the value ships; not_printed means the source has none; withheld_<reason> means Our Clarke has the value but does not publish it, for the reason named, and notes says why in words. An empty value with a present state does not occur.

Directions and ingredient lines are as printed, including the book's own spellings and the scan's small warts that pass the withhold rules. Where our scan misread the page, the card was corrected by hand against the page text, never added to, and notes says so.

macros_json is an estimate from a declared ingredient mapping, not a lab or label value. Per-serving figures appear only where the book prints a single number of servings or pieces.

The CC BY 4.0 license below applies to Our Clarke's compilation. It does not license the recipes: each keeps the basis in its license_note, and the book remains in copyright.

Schema: Recipes

Dataset wpvc-recipes, version 1.0.0, published 2026-09-17. One row per record; the CSV and the "Records" sheet of the XLSX carry the same columns in the same order.

ColumnTypeDescription
card_idstringStable Our Clarke identifier for the recipe card. Does not change between versions.
titlestringThe dish name as printed or contributed, capitalization kept.
source_book_citationstringThe book and year the recipe is printed in, or "Contributed to OurClarke" for a recipe a Clarke cook sent in.
source_pageintegerThe printed page number in the book. Empty for a contributed recipe.
yield_rawstringThe yield exactly as printed. Empty when the source prints none.
yield_parsedstringJSON: {"count": n} or {"min": a, "max": b}, with "unit" as printed (null when none is printed) and "approximate": true for "about". Empty when the source prints no yield, or when the printed words are not one number or range of a unit (see yield_state).
ingredients_jsonstringJSON list of the card's ingredient lines, each {"quantity", "item"} as printed, with the book's sub-headings as {"heading"} where they line up exactly. Empty when the list is withheld (see ingredients_state).
directions_textstringThe directions as printed, scan warts kept. Empty when withheld or not printed (see directions_state).
directions_statestringpresent; not_printed (the source prints no method); or withheld_<reason>, where the reason is the projection's own: scan_debris (garbled by the scan), headnote, or layout (misread from the page layout).
notesstringOur Clarke's note on the card: a correction made by hand against the book page, a note that the book prints no method or step, and one sentence for each withheld value saying why. Empty when there is nothing to say.
macros_jsonstringJSON: the estimated nutrient totals for the card from USDA FoodData Central SR Legacy (2018-04) through a declared mapping; estimates, not measured values. "state" is computed, computed_totals_only (no single printed number of servings, so per_serving is null), partial or withheld (totals and per_serving are null, and hold_reasons, unmapped_ingredients or unresolved_ingredients say why). A null nutrient inside totals is one FDC does not report for a counted food. Method: docs/recipes/macros_methodology_2026-09-16.md.
license_notestringThe card's own rights status and basis, as the recipe page states it. It governs the recipe itself; the dataset license covers Our Clarke's compilation.
contributed_bystringThe cook the recipe is credited to, as the book prints the name or as a contributing cook gave it.
ingredients_statestringpresent; not_printed; withheld_<reason> when the whole list is withheld; or present_heading_withheld_<reason> when the list ships but one of the book's sub-headings is withheld. Reasons as in directions_state.
yield_statestringrecorded (yield_parsed is filled), unparsed (printed, but not as one number or range of a unit) or not_printed.
recipe_notesstringThe note printed with the recipe, or the contributing cook's own note, verbatim. Empty when withheld or not printed (see recipe_notes_state).
recipe_notes_statestringpresent, not_printed or withheld_<reason>, as in directions_state.
card_urlurlThe card on the Our Clarke recipes page.

An empty cell means the value is not recorded in the source, or could not be read from it. It never means zero.
